Fig and Cacao Nib Smoothie

Fresh figs in a smoothie? Yes. You aren't dreaming. Although this vegan fig and cacao nib smoothie does taste like a dream in a cup.
Fig season is typically August through October and every time I start seeing figs in stores and farmers markets I am figgin' excited. I love em.
Which is why I knew I had to create a fresh fig smoothie. I have tried this smoothie with dried figs - I do not recommend it. It does not yield the same delicate flavor.

This smoothie is simple yet sophisticated. The key is to get fresh, ripe figs. The rest of decedent ingredients blend together to compliment the juicy figs.
So what are these decedent complimentary ingredients? I'm glad you asked.
Frozen banana for texture
Almond butter
Cacao nibs
Dates
Cinnamon
Plant milk
Voilà chefs kiss

If you're like me and you love figs and love finding ways to use them while they're in season do yourself a favor and make this smoothie. It's perfect for any time of day.
If you don't have cacao nibs no biggie omit them or sub vegan chocolate chips and call it dessert even if it's 10 AM. You deserve it.
This could easily be turned into a smoothie bowl by adding less plant milk to create a thicker texture. Top with granola, fruit, nuts, and whatever your heart desires.

Fig and Cacao Nib Smoothie
Vegan | Gluten Free | Soy Free
Equipment:
High speed blender
Ingredients:
1.5 frozen bananas
3-4 fresh black mission figs
2 tbsp almond butter
1 tbsp cacao nibs
2 dates
1/4 tsp cinnamon
Dash of sea salt
1/2 cup plant milk of choice
Instructions:
1. Add all ingredients to a blender and blend on high until smooth making sure the cacao nibs are fully incorporated.
2. Taste and adjust flavor/texture if desired. Best if enjoyed immediately. Can be stored in the fridge in an airtight container like a mason jar up to 24 hours. Can be frozen for up to a week. To thaw put in the fridge overnight.
