I have been drinking this smoothie combo on repeat for about two weeks now - no joke. I will go ahead and preface that it’s delicious without the kefir (which can be subbed for vegan yogurt) but there is something about the tang that the kefir adds that I prefer. You can’t taste the spinach at all so if you’re not a big fan of green smoothies but want to be this one is probably for you.
This smoothie is like a tropical vacation in a glass.
Pineapple Mango Green Smoothie
Vegan | Gluten Free | Soy Free | Nut Free Option
1 frozen banana
1/2 cup frozen pineapple chunks
1/2 cup frozen mango chunks
1 large handful fresh spinach - about 2 cups
Coconut kefir or vegan yogurt - approximately 3 tbsp
1 scoop vanilla protein powder (optional)
1/2 cup plant milk to blend or more if you prefer your smoothie thinner
1. Add all ingredients to blender and blend on high until creamy and smooth.
2. If it is too thick add a bit more plant milk and continue to blend until it is to your preference.
3. Enjoy immediately. Can be stored in the fridge in an airtight container for about 24 hours. Can also be frozen in an airtight container for about a week.
Sometimes I like to add a dash of lime juice.
