Vegan Caesar Dressing


Caesar salads have always been one of my favorite salads. If I’m honest I think it’s because I love salads that are smothered in dressing. I often plan my meals around which sauce/dressing I want to eat.


Which lead me to creating the perfect vegan Caesar dressing to smother my greens in as life intended.


One of my favorite ways to use this dressing is in a with massaged into chopped, de-stemmed kale, topped with my Vegan Parmesan Cheese, and some sort of protein on top like my Crispy Buffalo Sticks.


Vegan Caesar Dressing

Vegan | Gluten Free | Nut Free | Soy Free Option


Ingredients:

1 cup vegan mayo (use soy free if needed)

1 tbsp Dijon mustard

4 tbsp nutritional yeast*

3 cloves of garlic

3 tsp capers (with whatever juice comes along)

3 tbsp lemon juice

2 tsp vegan Worcestershire sauce

1 tbsp plant milk

1/4 tsp salt

1 tsp black pepper

Dash of Tabasco


Instructions:

1. Place all ingredients in a blender (I use the single serving attachment of my Ninja) and blend on high until fully incorporated. If you use a larger blender you will need to scrape the sides down or use an emulsion blender if you have one.

2. Store leftovers in an airtight container like a mason jar in the fridge for up to three weeks.


Notes:

*I like to add 2 tbsp nutritional yeast and 2 tbsp of my Vegan Parmesan Cheese
